A story that connects generations
Since 1906, Hotel Adler in Ehingen has been a place of encounter and hospitality. What once began as a small inn was developed by the Mauz-Steudle family over five generations into the market leader in the Alb-Donau district.
Every generation has left its mark, but the core values have remained: warmth, quality, and a deep understanding of our guests' needs. We look forward to welcoming you into our family.

1906: Purchase of the Gasthof Adler
Karl Mauz buys the Gasthof Adler and lays the foundation for a long tradition of hospitality.

1918: First appearance of Paula Mauz
Paula Mauz (née Bettle) – the later wife of Gregor Mauz – was seen in pictures for the first time.
1937: Paula Mauz dies
Paula Mauz died at a very young age, leaving behind three small children: Karl, Hilde, and Paula. In the very difficult times of the First World War, Paula already embodied values that we can still be proud of today and which suggest a deep connection to Swabia. Conscientiousness, the fulfillment of family obligations, and the love for her profession and gastronomy are striking and honorable qualities that defined Paula Mauz's personality.
1948: Company handover
After Gregor, the son of the married couple Karl and Ursula, had been a widower for 11 years following the death of Paula Mauz, he took over and operated the Adler with his new wife Luise Mauz (née Geiger) after the Second World War. Over time, they had said goodbye to agriculture, the distillery, and brewing beer, and concentrated on operating the inn and the guest rooms.
1971: Company handover
Gregor and Paula's son, Karl, took over the Adler and runs it with his wife Evi.
Generational change
1990: Hotel expansion
Car park superstructure and the creation of 24 new hotel rooms.
1996: Company Transfer
On his 60th birthday, Karl solemnly handed over the Adler to his children Sonja and Bernd, who, together with their spouses Andreas and Elisana, led it into its 4th generation.

2006: 100 Years of Adler
Celebrations around the 100th anniversary of the Adler.

2016: Hotel Expansion
Hotel expansion to 57 rooms.
2017: SPA Opening
Opening of the Lifestyle & Spa Club.
2020: Company handover
At the turn of the year, a big change awaits the Adler: With the handover of the business to Sonja's son Marc and his wife Jenny, a new chapter will begin. The largest interior renovation in Adler's history will be carried out, and the lifestyle inn Paulas Alb will be created.

2020: Opening of Paulas Alb - Lifestyle Restaurant
Why Paula's Alb? - Paula's character traits are still an integral part of our work today. Coupled with a new lifestyle aspect and the highest quality standards, it is an honor for us to include Paula Mauz in our naming, representing all home-loving Swabians. The connection to the Alb-Donau district and the Swabian Alb also contributed to regionality and a family atmosphere being two core pillars of the new direction at the Adler.
2022: 6. Generation
With the birth of son Levi, the foundation for the continuation of the house has been laid and the 6th generation of the family business is growing up. Tradition obliges, which is why our entire family has been pursuing our passion with full dedication for generations – being hosts.
2023: Redesign Hotel Reception
True to this motto, our reception area was spruced up in the same quaint, modern style as Paula's Alb to give our guests a cozy & familiar feeling upon arrival.
2023: Conference vault created
For our conference guests, we constantly strive to further develop and professionalize our offerings. With the renovation of the former play cellar (this area was used as a cigar and slot machine room in the 70s), we can now offer our conference guests a third unique and modern conference room with the "Gewölbekeller".
2024: Hotel Room Renovation
We are already setting the course for a successful future and have been able to offer you our new Superior Rooms since February 2024. In a tour de force, we have completely renovated 30 of the 57 rooms, so our house is now almost completely modernized and we look forward to many happy guests. The tasks in the future remain great, we are tackling them!
2025: Kitchen renovation
With the renovation of the kitchen in Paulas Alb, one of the most modern kitchens in Germany is being created. A combination of digital infrastructure, the best regional products, and much more efficient processes, we are investing in securing our high quality standards.
